4. Garden Vegetable Juice
If you’re a fan of veggie juice, you might be surprised at how salty it can be. This is no good for your health so making your own is the obvious solution. This recipe is easy and tastes really good.
24 pounds tomatoes, quartered
1 pound carrots, cleaned and diced
1 head celery, cleaned and diced
1 cup diced onions
1 large bunch parsley, washed
1 tablespoon sea salt
Bottled lemon juice
Place the tomatoes, a few at a time, into a large pot, breaking them with a masher as you go. Add the carrots, celery, onion and parsley. Bring the mixture to a boil, then simmer for 35 minutes. Strain the juice, returning the liquid back to the pot. Juice the veggie chunks, removing seeds before adding back to the juice. Add the salt. Heat the juice to 190 degrees and hold there for 5 minutes. Bottle the juice according to the directions on your canning device.
