However, if you have a hard time meeting your fruit quota for the day, juice is a great way to get you there. Making your own takes some of the guesswork out of reading labels and trying to figure out which one might be a good pick and which ones probably aren’t. Here are a couple of delicious homemade juice recipes to get you started.

4 cups fresh cranberries
4 cups water

Directions:

Bring the cranberries and the water to a boil. Simmer for 15 minutes, then strain the berries from the liquid, returning the juice to the pan. Add the syrup and heat until it dissolves. Pour into a jar and chill before drinking.

Directions:

Cook the grapes and water over low heat until the skins soften. Mash the grapes and continue simmering for 15 minutes. Strain the juice, then chill for 24 to 48 hours. You can heat can the juice at this point if you’d like, using traditional canning techniques.

Ingredients:

24 pounds tomatoes, quartered
1 pound carrots, cleaned and diced
1 head celery, cleaned and diced
1 cup diced onions
1 large bunch parsley, washed
1 tablespoon sea salt
Bottled lemon juice

Directions:

Place the tomatoes, a few at a time, into a large pot, breaking them with a masher as you go. Add the carrots, celery, onion and parsley. Bring the mixture to a boil, then simmer for 35 minutes. Strain the juice, returning the liquid back to the pot. Juice the veggie chunks, removing seeds before adding back to the juice. Add the salt. Heat the juice to 190 degrees and hold there for 5 minutes. Bottle the juice according to the directions on your canning device.
