4 cups fresh cranberries
4 cups water
½ cup real maple syrup
Directions:
Bring the cranberries and the water to a boil. Simmer for 15 minutes, then strain the berries from the liquid, returning the juice to the pan. Add the syrup and heat until it dissolves. Pour into a jar and chill before drinking.

Peels and cores from 5 pounds apples, Granny Smith are a good choice

½ cup sugar
Directions:
Place the peels and cores in a large pot and cover with water. Add the sugar and stir. Bring to a boil, then simmer for 30 to 45 minutes. Strain the juice and chill before drinking.

24 pounds tomatoes, quartered

Directions:
Place the tomatoes, a few at a time, into a large pot, breaking them with a masher as you go. Add the carrots, celery, onion and parsley. Bring the mixture to a boil, then simmer for 35 minutes. Strain the juice, returning the liquid back to the pot. Juice the veggie chunks, removing seeds before adding back to the juice. Add the salt. Heat the juice to 190 degrees and hold there for 5 minutes. Bottle the juice according to the directions on your canning device.
